Dragonfruit Coconut Cream Chia Pudding

If there is one tradition that has the most meaning in my life, it is our annual family Christmas holiday spent on Kauai. For over 30 years, my family (grandparents, aunts, uncles, cousins, etc.) makes the trip across the Pacific to spend some quality time in the sun together. As time has gone by, a lot of us have moved away from home and amongst the busy-ness of life, it is truly the time we all cherish most.

Along with all of things I look forward to before our trip every year, I get especially excited about all of the fresh fruit that the island provides, particularly dragonfruit. This exotic, hot pink beauty is hard to find here in DC and so I’ve had to resort to purchasing frozen smoothie packets (this is the brand I found) most of the time.

Dragonfruit is super high in Vitamin C and Phosphorus, a key nutrient in slowing down the aging process. Combined with being the most beautiful shade of pink, I really can’t think of any other fruit that gets me so excited.

For The Chia Pudding:

1/2 cup coconut water

1 cup nut milk of choice (I used coconut milk)

1 packet frozen dragonfruit (Pitaya Plus)

1/2 cup chia seeds

1 tbsp. raw honey

* combine all ingredients together and place in refrigerator for a minimum of 30 mins

For The Final Product:

1. add 1/2 of the chia pudding into a glass of choice

2. layer in a 2 tbsp. of coconut cream or yogurt of choice

3. add another layer of chia pudding

4. top with coconut chips or flakes and anything else that strikes your fancy

(i.e. strawberries, sliced banana, granola, dried rose petals etc.)
