There is something about the California in me that requires we always keep avocado in our kitchen. Unfortunately, East Coast living doesn’t always lend itself to a year round supply in our local grocery store (we shop at Mom’s and sometimes they just don’t have them). So when I do find some good ones and am craving a more filling snack, this is my go-to. This is so simple and took me under 5 minutes — who says healthy snacking needs to be hard?
bread of choice (I used a grain-free pita bread), toasted
baba ghanoush or hummus of choice
sprouts or microgreens
red chili flakes
squeeze of lemon
